Donna's Strawberry Pie

 

1 deep dish pie shell, prebaked
1 cup sugar
3 Tbsp cornstarch
2 pints fresh strawberries
3 Tbsp strawberry jello (1/2 package so save for a second pie)
4 oz cream cheese

 

Mix sugar and cornstarch, set aside.  In a food processor, crush enough strawberries to equal 1 1/3 cup.  Add enough water to strawberries to equal 1 1/2 cup. Bring strawberries to boil:  stir in sugar and cornstarch.  Cook until thick and clear.  Remove from heat and add jello.  Mix cream cheese with 1 Tbsp hot berry mixture:  spread over bottom of pie shell.  Stand 8-9 whole strawberries top side down in cream cheese mixture.  Pour filling over berries and refrigerate until chilled.  Cover pie with one pint real whipped cream mixed with 2 tsp powdered sugar (no cool whip).
